Made With Love: Grandma’s Rotel Dip

As a child my grandma’s house was the one place that brought me the most comfort and joy. I remember her home-cooked meals bringing my family together, time and time again for Sunday dinners, family barbecues, and special occasions. The kitchen at my grandma’s house reflects her warm and welcoming nature, from the dim, yellow lighting, to the perfectly labeled glass jars of ingredients on the counter. Whenever she was cooking, the sounds of R&B music would flow all throughout the rooms of her cozy, one-story house. My favorite dish was her Rotel dip; simple but delicious. If a big meal was being prepared, my grandma would whip up a pot of Rotel dip with blue tortilla chips for my cousins and I who were too impatient to wait to eat. This small gesture has stayed with me even into adulthood and is something she continues to do when I come home from college. I will always hold a special place in my heart for my grandma’s cooking and the memories I have made with her in the kitchen.

Rotel Dip Recipe:

  • 1 lb. ground beef
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • Onion powder
  • Garlic powder
  • Salt and pepper
  • 2- 10oz Rotel cans
  • 2 lbs. Velveeta cheese, original
  • 1 bag blue tortilla chips

Directions:

  1. Cook hamburger meat in a pan on medium heat (add onion, green pepper, and seasoning).
  2. Add Rotel until warm. Add cheese and mix slowly until incorporated.
  3. Enjoy with chips!A bowl of Rotel dip on a plate of tortilla chips
