Fried Spam, Egg, and Cheese Sandwich

Ingredients

Serving: 1

  • 1 egg
  • ⅛ Can of Spam
  • 2 tbsp butter
  • 1 tbsp JIG mayonnaise
  • 1 slice Kraft Singles
  • 2 slices White Bread
  • Salt and Pepper to taste

The scent and sizzle of breakfast wakes me.

Rubbing my eyes and dragging my feet, I walk to my personal heaven.

A familiar face greets me, sweat on her brow, and freckles cover her complexion.

My Nana, the one person I could hug every day for the rest of my life.

She drinks from a coffee mug that holds her signature black coffee from a pot with powdered original creamer sprinkled in.

The butter melts on the skillet and Nana places the sliced spam down. After the slice is fried to a crisp brown and the butter crackles over the surface, she places the spam onto a paper towel to continue to crisp.

With the spam and butter grease, she pours her egg mixture into the skillet and cooks them omelet-style, placing a Kraft single down when the eggs are cooked.

She now has everything she needs to assemble the perfect breakfast sandwich.

With our sandwiches assembled and our mouths watering, we are ready to sit and enjoy the meal together over coffee and laughs.

Instructions

  1. Place half of the butter into a skillet on medium heat.
  2. Slice spam into 8 individual slices.
  3. Once butter is melted place spam slices on the pan.
  4. While the spam browns whisk the eggs with salt and pepper.
  5. Take the spam off the heat once both sides are browned and place on a plate covered with paper towels.
  6. Put the other half of the butter on the skillet and pour the eggs into the pan.
  7. Drag the cooked edges of egg to the center replacing the cooked edges with the uncooked egg by maneuvering the skillet to the side.
  8. Once the eggs are cooked take off the heat and place Kraft singles on top covering with a lid to melt.
  9. Take two slices of white bread (option to toast) and spread JIF evenly on the slices. Place 1-2 slices of spam and enough egg to cover the bread.
